नवरतन क़ोरमा

 नवरतन क़ोरमा

सामग्री

    * 9 तरह की सब्ज़ियाँ (आलू, गाजर, मटर, टमाटर, फूलगोभी, प्याज़, पत्ता-गोभी, लौकी और गवार फली)
      शोरबे के लिए--
    * कद्दूकस किया हुआ पनीर 150 ग्राम
    * 2 प्याज कद्दूकस किए हुए
    * अदरक पिसा हुआ डेढ़ चम्मच
    * लहसुन पिसा हुआ डेढ़ चम्मच
    * नमक स्वादानुसार
    * हल्दी एक छोटा चम्मच
    * कश्मीरी लाल मिर्च पिसी हुई 15 ग्राम (एक बड़ा चम्मच)
    * धनिया पिसा 30 ग्राम (दो बड़े चम्मच)
    * ज़ीरा पिसा 15 ग्राम (एक बड़ा चम्मच)
    * गरम मसाला पिसा 25 ग्राम (डेढ़ बड़ा चम्मच)
    * तेल 6 बड़े चम्मच
    * घी 1 बड़ा चम्मच
    * 1 प्याला पानी
    * बारीक कटा हरा धनिया और दो बड़े चम्मच क्रीम सजावट के लिए

विधि


  * आलू, गाजर, फूलगोभी, लौकी और गवार फली को बड़े टुकड़ों में काटें, नमक हल्दी और लाल मिर्च और एक चम्मच दही के साथ लपेटकर एक घंटे तक रखें और धीमी आँच पर गलने तक पकाएँ।
    * एक फैले पैन में तेल गरम करें, टमाटर के बड़े टुकड़े इसमें डालें नमक छिड़कें अच्छी तरह मिलाएँ। ध्यान रखें टमाटर पानी न छोड़ दे और उसका आकार ख़राब न हो लेकिन उस पर सेंकने का रंग आ जाए।
    * प्याज़ लगभग एक इंच की लें उसमें पतले सिरे पर धनाकार चीरा लगाएँ ध्यान रखें प्याज़ दूसरे सिरे से जुड़ा रहे, चार टुकड़े न हो जाए। इसे भी टमाटर की तरह पकाएँ।
    * पत्ता-गोभी के पत्ते उतार लें। कोमल पत्तों के दो इंच चौड़े टुकड़े करें और उसको उँगली पर लपेटकर रोल का आकार दें और इसी तरह बनाए रखने के लिए टूथपिक लगा दें। इसे भी टमाटर की तरह पकाएँ और अलग रखें।
    * मटर को ज़ीरा डाल कर छौंकें, नमक छिड़कें और नरम होने तक पकाएँ।
    * प्रमाणिक नवरतन क़ोरमा के लिए सब सब्ज़ियों को अलग अलग पकाना चाहिए और नमक लगाने से जो पानी निकला है उसके अतिरिक्त जहाँ तक हो सके पानी नहीं डालना चाहिए। आँच पर ऐसा नियंत्रण रखना चाहिए जिससे तैयार होने पर किसी सब्ज़ी में पानी न रहे।
    * मोटी तली वाले एक बड़े बर्तन में तेल गरम कर लें और प्याज़, अदरक लहसुन को सुनहरे होने तक भूनें।
    * थोड़े पानी के साथ घोलकर हल्दी, धनिया, मिर्च, ज़ीरा और गरम मसाला डालें।
    * तेल अलग होने तक भूनें।
    * पानी डालें। गाढ़ा होने तक पकने दें।
    * पनीर डाल कर अच्छी तरह मिला लें।
    * सुगंध के लिए घी मिलाएँ।
    * परोसते समय किसी फैले बर्तन में सब सब्ज़ियाँ सजाएँ ऊपर से गाढ़ा शोरबा इस तरह डालें कि सब्ज़ियों पर यह लिपट तो जाए पर सब्ज़ियाँ इसमें डूबें नहीं।
    * हरे धनिये से सजाकर गरम गरम परोसें।
